• Altitude: Our vineyards are located at an altitude of 700 meters, in Miguel Esteban (Toledo) in the heart of La Mancha region, a privileged place for vine growing.
  • Soils Composition: We can find, mainly, two different kinds of soils:
  • Clay-limestone soils: Here we produce our young ECCE VINUM. These soils provide salty notes to our wines. As they are richer in nutrients, we can create wines with more fruit and acidity, with a feeling of freshness since the root of the vine manages to reach the limestone layer that keeps moisture during the summer. This kind of soil also allows the ripening cycle to be slower, achieving a greater aromatic intensity.
  • Sandy soils with a layer of gravel at the bottom. Here we produce our ECCE VINUM Premium. Wines here are more subtle, smooth, and elegant. Sand and gravel provide complexity, minerality, freshness and a very clear identity.
  • Old vines: Average age of our vineyards is over 60 years old, although there are plots that are over a hundred years old. Because of the age of the vines, we have low yields ensuring a high quality of our grapes. When these vines are grown in suitable soils for quality viticulture, we can talk about "Viticultural Heritage".
  • Maturation: The small stones found in certain areas of Miguel Esteban are an important factor for the quality of our wines. These stones, rounded over time, absorb the sun's heat during the day and release it slowly at night. This thermoregulatory effect benefits the growing cycle of the vineyards and the ripening cycle of the grapes.
